Inspired by Cadbury’s amazing range of Marvellous Creations, I wanted to replicate my favourite flavour, Jelly Popping Candy Beanies in a delicious rocky road. Cadbury got it so right with this chocolate bar so I had to see if I could recreate this magical combination. So I armed with my popping candy, off I went to the kitchen!
To make the rocky road a legitimate rocky road, I also loaded it with chunky pieces of marshmallow and threw in a few salted peanuts for good measure. Just like my favourite Marvellous Creations candy bar, I also added popping candy, a smattering of smarties and chopped chewy red licorice as the jelly pieces. Other than that, the only other ingredient was lots and lots of chocolate. I think I just found my new favourite rocky road recipe.
Marvellous Rocky Road
Makes approximately 16 squares
500 grams (3 and 1/4 cups) good quality milk chocolate
200 grams (1 and 1/4 cups) good quality dark chocolate
150 grams (2 cups) big marshmallows
100 grams (2/3 cup) smarties or M&M’s
50 grams (1/3 cup) salted peanuts
50 grams (1/3 cup) red licorice or red lollies
4 packets of strawberry popping candy
Lightly grease and line your slice tin (I used a square 20cm tin.) Measure out your ingredients. Chop the red licorice into small chunky pieces, chop the peanuts a little bit but leave fairly chunky and chop a few marshmallows but leave most of them whole.
Break up all the chocolate and place in a small heat proof bowl. Fill a small saucepan with 5cm of water or so and place on a medium heat. Place the bowl with the chocolate over the top, ensuring the bottom of the bowl does not touch the water. As the water heats up, the steam will warm the bowl and melt the chocolate. You could also melt the chocolate in the microwave if you prefer.
Once the chocolate is completely melted and has cooled slightly, add all your prepared ingredients and give the mixture a good stir. Pour into your prepared tin and place into the fridge to set. The thickness of your rocky road will determine the setting time, but it’ll take a good few hours. Once it has set completely, chop into chunky squares and devour.
I love this rocky road recipe but it has so much room for you to add your own favourite candies. If you don’t like popping candy? No worries, take it out and add it something else. i think this rocky road would go great with peanut M&M’s or even chunks of Oreo. Get creative!
