It’s that time of the year when we all go mad for rocky road. Whether it’s my traditional Christmas Rocky Road, my creamy Nutella Rocky Road Bark or my gooey Rolo Rocky Road, I’m rocky road obsessed.
But now there’s a new rocky road recipe to love. My White Chocolate Rocky Road is designed especially for the holidays.
It’s filled with all the good things, including marshmallows and coconut and I’ve also thrown in a few jelly lollies for extra chew and a pop of colour.
Just like my favourite White Chocolate Macadamia Cookies, we use oodles of white chocolate – the better white chocolate you can use, the more decadent this treat will be.
Honestly, this White Chocolate Rocky Road has everything. Crunch from the pistachios, plenty of chew from the tart cranberries and big clouds of marshmallows. Not to mention, a generous portion of creamy white chocolate.
Friends and family will love this easy holiday treat! It’s a simple recipe for the busy festive season, but is also perfect for Valentine’s Day or Mother’s Day.
My advice is to make double, just you don’t miss out! Because this dessert is too good not to share ❤️
Ingredients
This White Chocolate Rocky Road recipe calls for just six ingredients. Here’s everything you’ll need, including any substitutions you can make:
- White Chocolate: You will need a couple of blocks of white chocolate. I recommend using blocks of chocolate rather than melts or chocolate chips. I use Nestle Plaistowe chocolate – use the best chocolate you can. If you’re not a white chocolate fan, you could even try this recipe using milk chocolate or dark chocolate.
- Marshmallows: I love to use large marshmallows for this recipe because they look fabulous when sliced and help to break up the chocolate. You can substitute mini marshmallows if that’s what you have on hand.
- Pistachio nuts: Nothing says Christmas like pistachios and cranberries. You can use raw or toasted pistachios here. You can even use salted pistachios if you like a bit of sweet and salty.
- Cranberries: Dried cranberries work best – even the reduced sugar dried cranberries will work fine here. Alternatively, you can use whatever dried fruit you prefer.
- Coconut: I recommend using unsweetened shredded coconut. However, desiccated coconut will also work.
- Red lollies: For a pop of colour and extra chew, I love to throw in some red lollies – I use red raspberries. You can use any red chewy lolly you prefer in this rocky road. You could try Allen’s Raspberries, Swedish Fish, Red Liquorice or Turkish Delight or anything similar.
The beauty of rocky road is that it is highly customisable. As long as you keep the ratio of melted chocolate to mix-in’s, you can substitute whatever you like.
Your favourite crunchy biscuit or rice bubbles would also work. However, I do recommend trying my recipe as is because it really is the perfect blend of crunch and chew!
How to make White Chocolate Rocky Road
This is a simple rocky road recipe. You don’t need an electric mixer.- just a bowl and spoon. Here’s a quick overview of how to make my White Chocolate Rocky Road.
Step 1: Add chocolate to a microwave-safe bowl. Heat in the microwave, stirring in-between 20-second bursts, until melted and smooth.
Step 2: Add marshmallows, pistachios, cranberries, coconut and red lollies.
Step 3: Stir gently until everything is completely coated in white chocolate.
Step 4: Pour into prepared pan and gently smooth over the top. Decorate the top with a few extra mix-in’s.
Step 5: Place White Chocolate Rocky Road in the fridge for one hour or until set.
Step 6: Use a sharp knife to carefully slice the rocky road into small pieces.
Recipe tips
- Use good quality chocolate: Your rocky road will only taste as good as the chocolate you use. Pick a nice quality block of chocolate over chocolate melts or chips.
- Keep the ratios the same: If you have to swap a few of the ingredients for your preference, keep the ratio of chocolate to mix-in’s the same. Too many mix-in’s and you won’t have the right chocolate coverarage – too little and your rocky road will be underwhelming.
- Let it come to room temperature before slicing: We all want perfect rocky road square. Let your rocky road come to room temperature before slicing to avoid your chocolate cracking when sliced. Use a cutting board and a straight-edge knife.

White Chocolate Rocky Road recipe
Easy no bake 6 ingredient White Chocolate Rocky Road.
Ingredients
- 600 grams (3 cups) good quality white chocolate, broken into pieces
- 150 grams (2 and 1/4 cups) large pink and white marshmallows
- 75 grams (1/2 cup) pistachios, plus extra for decorating
- 60 grams (1/2 cup) dried cranberries, plus extra for decorating
- 30 grams (1/2 cup) shredded coconut
- 45 grams (1/4 cup) chewy red lollies
Instructions
- Grease and line an 8-inch square pan with baking or parchment paper.
- Place white chocolate in a large heatproof bowl. Melt in the microwave, stirring every 20 seconds, until smooth.
- Add marshmallows, pistachios, cranberries, coconut and red lollies and stir until all the mix-ins are covered with chocolate.
- Pour the rocky road into the prepared pan and spread out into one even layer. Press extra pistachios and cranberries on top while the chocolate is still wet.
- Refrigerate for at least one hour or until set. Cut into small squares and serve.
Notes
White Chocolate: You will need a couple of blocks of white chocolate. I recommend using blocks of chocolate rather than melts or chocolate chips. I use Nestle Plaistowe chocolate – use the best chocolate you can.
If you don’t have a microwave, you can melt the white chocolate using a double boiler. Simply sit a heatproof bowl on top of a saucepan on medium heat that has a few inches of simmering water in it. Ensure the bottom of the bowl does not touch the water. Stir gently by hand to melt the chocolate.
Marshmallows: I love to use large marshmallows for this recipe because they look fabulous when sliced and help to break up the chocolate. You can substitute mini marshmallows if that’s what you have on hand.
