My Easter Egg Rocky Road is filled with roasted, salted peanuts, mini marshmallows and mini Easter eggs. That’s right – just four ingredients!
It’s perfect for celebrating Easter, or a great way to use up leftover chocolate – if that’s a thing in your household 😉

If I don’t want to turn the oven on and make a batch of Mini Egg Cookies, I’ll opt for my Easter Egg Rocky Road. It’s not only no bake, but quick and easy to make.
It’s a lovely twist on classic rocky road or tiffin, still made with melted chocolate, peanuts and mini marshmallows, but with a stack of mini Easter eggs too!
A chunky chocolate slice that’s chewy, crunchy and seriously hard to resist. This is my go-to recipe to give away as Easter gifts.

Ingredients
Just four ingredients including leftover Easter chocolate, and you have the ultimate Easter Egg Rocky Road. Here’s a quick breakdown of what you will need, including any substitutions you can make.
- Chocolate: I recommend a good quality chocolate for the best tasting rocky road. I typically use dark chocolate or semi-sweet chocolate (50-70% cocoa), but milk chocolate or even white chocolate work just as well. Sometimes I like to use half dark and half milk chocolate. Try using a block of chocolate, rather than chocolate melts or chocolate chips for a more smooth and tasty end result.
- Peanuts: Use roasted and salted peanuts for maximum crunch and flavour. You can really use whatever nuts you prefer. Macadamias, almonds or cashews would also be lovely. If you don’t want to use nuts, you can leave them out. I would just throw in a few extra marshmallows and/or Easter eggs. Or a great replacement is crushed or broken biscuits like Digestive biscuits or rich tea biscuits.
- Marshmallows: Mini marshmallows work nicely in this recipe, but you can use large marshmallows if you like, just like I do in my favourite White Chocolate Rocky Road recipe.
- Easter eggs: Any of your favourite mini Easter eggs will work. I’ve made this recipe using mini creme eggs, Turkish Delight, caramel, Oreo, chocolate orange eggs, white chocolate or just plain mini eggs. And it’s always good.

How to make Easter Egg Rocky Road
It takes only minutes to make this rocky road slice. You don’t need an electric mixer, just a bowl and spoon.
You can melt your chocolate in the microwave (my preference) or using a double boiler on the stove.
Here’s how to make it in four easy steps. The full method and instructions are included in the recipe card below.
Step 1: In a large bowl, add chocolate pieces. Heart chocolate in the microwave until smooth and creamy.
Step 2: Add peanuts, marshmallows and (almost) all your Easter eggs. Stir to completely coat in chocolate.
Step 3: Transfer rocky road mixture to prepared pan. Press a few extra Easter eggs on top.
Step 4: Place in the fridge to set. Cut into small squares to serve.
Frequently asked questions
It’s hard to slice rocky road neatly when it’s fridge cold. Bring it back to room temperature to slice using a large sharp knife, then store leftovers in the fridge. you can also freeze any remaining rocky road.
Keep Easter Egg Rocky Road in an airtight container in the fridge.
Typically, if stored correctly, rocky road keeps well for up to one week. But it rarely lasts that long!

Easter Egg Rocky Road recipe
Easter Rocky Road recipe packed with mini Easter eggs, mini marshmallows, and roasted peanuts.
Ingredients
- 450 grams (3 cups) good quality dark chocolate (45% cocoa), roughly chopped
- 65 grams (1/2 cup) roasted peanuts, salted
- 60 grams (1 cup) mini marshmallows
- 360 grams (2 cups) mini Easter eggs, unwrapped
Instructions
- Grease and line an 8-inch square pan with baking or parchment paper.
- Place chocolate in a large, heatproof bowl, Melt chocolate in the microwave, stirring every 20 seconds, until smooth and creamy.
- Add peanuts, marshmallows and two thirds of the mini Easter eggs to chocolate and stir until everything is coated in chocolate.
- Pour chocolate mixture into prepared tin and spread out until into one smooth layer. Press the rest of the mini Easter eggs on top while the chocolate is still wet. Refrigerate for two hours or until the chocolate is set.
- Cut into small squares and serve. Store rocky road in the fridge in an airtight container.
