Over the Christmas break, I was happily reunited with family after a long year of lockdowns and border closures. It was a very sweet holiday season for us ❤️ One afternoon, we went over to my sister-in-law’s house for afternoon tea.
When we arrived, she whipped out a buttery Oat Slice for us to enjoy. A few bites in, I was smitten! I immediately asked her how she made it and what was in it, and when I got home, I set about recreating a copycat version of my own.
Taking a little inspo from my favourite Anzac Biscuits and Oatmeal Cookies, this baked oat slice is buttery, chewy and incredibly easy to make. It’s filled with oats and coconut, with plenty of butter and brown sugar for that rich, caramel-like flavour.
It’s quick, easy and very moreish.
what you will need
- Plain flour: Or all purpose flour.
- Rolled oats: Don’t use quick oats, you want whole oats for texture and consistency.
- Coconut: I prefer shredded coconut but desiccated works too.
- Brown sugar: Adds delicious caramel notes.
- Baking powder: For a little lift.
- Butter: We use melted butter to combine everything together.
- Egg: Just one egg to bind.
- Vanilla extract: For extra flavour.
- Mix-in’s of your choice: More on that below.
how to make it
- Stir together flour, oats, coconut, brown sugar, baking powder and salt.
- Whisk together butter, egg and vanilla – just to break up the yolk.
- Add wet ingredients to dry ingredients and stir until combined.
- Stir through mix-in’s.
- Bake until golden.
Quick tips for the perfect oat slice
- Weigh your ingredients using a baking scale: For the best results, use a scale to measure your dry ingredients like flour, oats, and sugar. Using cup measurements can result in adding too much flour or oats, which may result in your slice being dry and crumbly.
- Don’t overbake your slice: Keep an eye on your slice as it will go from baked to burnt fairly quickly. Once it’s evenly browned and golden on the edges, it’s ready to come out of the oven.
- Take it out of the pan: Your Oat Slice will continue to bake as it cools if it’s left in the hot pan, which can result in hardened edges. However, it’ll be too fragile to lift out of the pan straight away. Let it cool for 15 minutes or so, then carefully lift your slice out of the hot pan and place it onto a wire rack to cool completely.
make it your own
You can add any mix-in’s you like to this delicious Oat Slice. I love to add chocolate chips, sultanas or nuts, but you can use whatever you have in the pantry. Here are a few ideas of mix-in’s you can use. I used chocolate chips and pecans in the one pictured here.
- Chocolate chips (milk, dark, white chocolate or Caramilk works well too!)
- Sultanas or raisins (for a little chew)
- Cranberries, blueberries or apricots (tart and fruity)
- Walnuts, almonds or pecans (add some crunch)
- Orange zest (fresh and zingy)

Let’s Bake
Easy Oat Slice
A soft and chewy Oat Slice that takes just minutes to make.
Ingredients
- 140 grams (1 cup) plain flour or all purpose flour
- 100 grams (1 cup) whole rolled oats
- 60 grams (1/2 cup) shredded coconut
- 135 grams (3/4 cup) brown sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 115 grams (1/2 cup or 1 stick) unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup mix-in’s of your choice (see notes)
Instructions
- Preheat oven to 180 C (350 F) standard / 160 C (320 F) fan-forced. Grease and line an 8-inch square pan with baking or parchment paper, ensuring two sides overhang (this will make it easier to remove the slice later).
- In a large mixing bowl, add flour, oats, coconut, brown sugar, baking powder and salt. Give it a quick stir.
- In a small bowl, add melted butter, egg and vanilla. Beat briefly with a fork, just to break up the egg yolk.
- Add butter mixture to dry ingredients and stir using a spatula until combined. Stir through your mix-in’s.
- Transfer mixture to your prepared pan. Use the back of a spoon to press down firmly to form one even layer.
- Bake for approximately 25 minutes or until golden. Leave to cool for 15 minutes, then carefully remove from baking pan and set on a wire rack to cool completely.
- Cut into small squares to serve. Store leftovers in an airtight container at room temperature.
Notes
Coconut: You can use shredded coconut or desiccated coconut for this recipe. Be sure to use unsweetened coconut. If you want to omit the coconut, add an extra 35 grams (1/4 cup) plain flour or all purpose flour.
Mix-in’s: This recipe is highly customisable. I recommend adding 1 cup (total) mix-in’s, but you can choose to add two different mix-in’s (1/2 cup each). The slice pictured has 1/2 cup of chocolate chips and 1/2 chopped pecans. Great options include: chocolate chips, sultanas or raisins, dried cranberries or apricots, almonds, walnuts or macadamias, or even M&M’s. Leave a comment below telling us what your favourite combo is!
Storage: Keep slice in an airtight container at room temperature. Or you can freeze the slice.
Lou says
Beautiful recipe! Thanks for sharing. My add-in was a mix of almonds, pistachios white choc chips and dried cranberry pieces. Delicious!
Jessica Holmes says
That sounds magical Lou!
Emily Bristow says
Beautiful easy recipe! I should have read the tips suggesting the use of scale measurements instead of cup measurements because it was on the crumbly side, but still a big hit 🙂
Jessica Holmes says
I’m so glad you enjoyed it Emily! That’s it, a little less flour should help.
Meredith says
One of my go-to bakes. I LOVE this. You can add anything to it and make it new and different each time! Delish
Jessica Holmes says
Brilliant! So glad you like it Meredith!
Stephanie says
Hi, can I substitute the brown sugar with honey? Or would that make a different texture?
Jessica Holmes says
Hi Stephanie, I haven’t tried myself but yes it will change the texture. Sugar not only adds sweetness, but also moisture, flavour and colour. You could try substituting a small amount and see how it goes.
Claire says
Best slice EVER. Kids love it, I love it, everyone loves it. So easy, so yummy! Gotta practice self control with this hanging around
Jessica Holmes says
Love that Claire! I totally agree – it’s very moreish!
Tianah says
I have made this many times and it is the absolute best recipe! I have a few extra punnets of strawberry’s on hand- do you think they would work in this?
Thanks!
Jessica Holmes says
I’m so happy to hear that Tianah! Yes I think strawberries will work, just try not to add too many in as they might add too much moisture.
Roma says
Hi, can I use oat flour instead of plain flour. Thanks in advance
Jessica Holmes says
Hi, I’m sorry I haven’t tried this recipe with oat flour.
Donna says
I’ve used half oat and half normal and that seemed to work fine.
Pauline says
Do you think I can substitute butter with coconut oil? Made this as it is btw and its soo good and easy. Will make this more often
Jessica Holmes says
I’m so glad you enjoyed it Pauline! I haven’t tried it with coconut oil, but i think it could work. If you try it, please let us know how you go!

I’ve made this as soon as you’ve dropped the recipe, and it’s a family favourite. Dark chocolate chips are the superior mix ins. Currently making another batch as I’m typing this. It doesn’t last very long in the household. Best oat slice recipe!
Jessica Holmes says
What high praise! Thank you Delwen!
Sally says
Another lovely successful recipe, I added chopped apricots & cranberries, delicious. Taking a batch to my church coffee morning tomorrow… so thank you for the recipe.
Jessica Holmes says
I’m so happy to hear that Sally! I hope everyone loves it!

A quick, easy, and delicious slice! Made it quickly with my toddler, and we are having to refrain ourselves from eating it all in one go. Have sent the recipe to a couple of friends, insisting they try it as well!
Jessica Holmes says
Wow! Love hearing that Jess! Thank you for sharing the love ❤️
Kate says
So quick and easy! It was a big hit with my family. Thank you for another great recipe!

Elena says
Delicious and super easy. Ok, all my reviews in Sweetest Menu sound basically the same, like I’m the laziest reviewer ever. But it’s the simple truth! There are no better words to describe it. I baked this during my kids’ nap time, while cleaning AND working out at the same time. THAT easy these are. I included a lot of substitutions (based on what I had at home and wanted to get rid of). And the result is fabulous! Chewy, tasty, and good looking. My husband and kids loved them. I’ll definitely bake them again. Thanks Jessica once again for your wonderful recipes and for the joy they bring into our lives.
Jessica Holmes says
Wow! What kind words Elena! So glad you loved the slice – your lovely review just made my day xx
Aisha says
Hii, can we use quick oats instead?
Jessica Holmes says
Hi, it won’t quite have the same texture. I recommend going with rolled oats if you can!
Josh says
Loved it!
Jessica Holmes says
So happy to hear that!
