And just like that I’ve joined the unicorn trend. š¦
You’ve seen it right? All the unicorn food flooding the internet? All things pretty and purple with loads of sprinkles. With here is my first unicorn creation. Buttery funfetti cookie squares filled with white chocolate chips and topped with purple and turquoise buttercream.
It’s sweet and simple and almost too pretty eat. Almost.
I don’t exactly know what makes a food, unicorn-y, but I *think* these Funfetti Cookie Bars past the test. There’s sprinkles, there’s chocolate and there’s swirled purple buttercream.
So what I really want to know, is have you tried to the Starbucks Unicorn Frappuccino?
I don’t think we have them here in Australia but they have been flooding my Instagram feed. To be honest, I’m not sure they would taste anything other than sweet, but it is exactly the type of drink I would order at Starbucks.
So back to the cookie at hand. This šš» Unicorn Funfetti Cookie Slice is what dreams are made of. Golden, buttery with a sweet caramel flavour thanks to the brown sugar. Then there’s all the funfetti sprinkles, which make me oh-so-happy. I actually bought these ones especially from the USA because Aussie sprinkles just aren’t quite the same!
Of course, there has to be some chocolate in there somewhere, so I added white chocolate chips. The final touch? Plenty of rainbow buttercream – in pretty unicorn colours of course!
To create those perfect unicorn swirls, all you need to do is make two different colours of buttercream. Place both frostings into a piping bag, one on one side, one on the other, and pipe away.
The colours will naturally swirl as you pipe and you will end up with stunning two-tone clouds of frosting. Throw over a few extra sprinkles and you have the perfect unicorn treat.
So how was your week? A highlight for me was attending a baking class with the famous Anneka Manning at her Bake Club school here in Sydney. She taught us how to make the perfect light and fluffy sponge. I had such a great time! And also learnt a lot.

Unicorn Funfetti Cookie Bars
Gorgeous funfetti cookie bars topped with colourful unicorn frosting.
Ingredients
Cookie
- 115 grams (1/2 cup or 1 stick) unsalted butter, room temperature
- 135 grams (3/4 cup) brown sugar
- 1 teaspoon vanilla extract
- 1 large egg, room temperature
- 210 grams (1 and 1/2 cup) plain flour
- 1/2 teaspoon baking soda
- 40 grams (1/4 cup) white chocolate chips
- 40 grams (1/4 cup) sprinkles
Unicorn buttercream
- 115 grams (1/2 cup or 1 stick) unsalted butter, room temperature
- 1 teaspoon vanilla extract
- 375 grams (3 cups) icing or powdered sugar, sifted
- 2 tablespoons milk
- Gel food colouring
- Sprinkles, to decorate
Instructions
- Preheat oven to 180 C (350 F) standard / 160 C (320 F) fan-forced. Grease and line an 8-inch square pan with baking paper, ensuring two sides overhang.
- In a large mixing bowl, beat butter and sugar with an electric mixer until pale and creamy. Add vanilla and egg and beat again. Sift in flour and baking soda and stir until a soft cookie dough forms.
- Add the chocolate chips and sprinkles. Transfer the cookie dough to your tin and spread out gently to form one even layer. Bake for approximately 18-20 minutes or until golden brown. Leave to cool completely.
- To make the unicorn buttercream, beat the butter and vanilla until pale and creamy. Add the icing sugar, one cup at a time, along with the milk, until thick and smooth. Divide the buttercream into two bowls and add a tiny bit of food gel into each one. I used a Teal food gel for the turquoise and a Violet food gel for the purple.
- Place both frostings into a large disposable piping bag fitted with a large round tip. Pipe swirls of buttercream over your cookie slice, then scatter over extra sprinkles. Cut into bars and serve.

I think these certainly fit the "unicorn" bill. I love that beautiful buttercream! I did not try one of the drinks from SBux. I heard they were so awful!!
