Say hello to my Crispy Kit Kat Chocolate Chip Cookies. If there is one thing that we love here at SM, it's chocolate chip cookies. Of all shapes and sizes! And these thin and crispy Kit Kat Chocolate Chip Cookies are the latest addition to the cookie family.
If you LOVE choc chip cookies and Kit Kats, then you will be a fan of these golden beauties. Baked to perfection, you'll enjoy crunchy edges, gooey pockets of chocolate and plenty of wafer goodness.
To make your Chocolate Chip Cookies extra special, set aside a few extra chocolate chips and chopped Kit Kats to decorate the tops. I like to do this when the cookies have just come out of the oven and are still warm. Because more chocolate = better cookies.
One of my 'secrets' to a good chocolate chip cookie is using chopped chocolate rather than chocolate chips. The irregular shape of the chocolate makes for more gooey centres and it also makes each cookie unique. However, when you are loading your cookies with big chunky pieces of Kit Kats, regular choc chips work just fine.

Crispy Kit Kat Chocolate Chip Cookies
Makes approximately 16 cookies
115 grams (1/2 cup or 1 stick) unsalted butter, room temperature
90 grams (1/2 cup) brown sugar
100 grams (1/2 cup) caster sugar
1 teaspoon vanilla extract
1 large egg
175 grams (1 and 1/4 cup) plain flour
1/2 teaspoon baking soda
140 grams (1 cup) Kit Kats, chopped, plus extra for decorating
75 grams (1/2 cup) milk or dark chocolate chips, plus extra for decorating
Line two baking trays with baking or parchment paper. Preheat the oven to 180 C (360 F). In a large mixing bowl, beat the butter and sugars using an electric beater until pale and creamy. Add the vanilla and the egg and beat until combined. Sift in the flour and baking soda and stir gently. Add the chocolate chips and chopped Kit Kats and stir through. Use a cookie scoop or roll small balls of dough in your hands and pop them onto your prepared trays.
Bake your cookies for approximately 10 minutes or until golden brown on the edges. Pop a few extra chocolate chips and Kit Kats on top of each cookie. Once the cookies have cooled slightly, gently remove from the tray (they will be quite fragile) and transfer onto a wire rack to cool completely. Then enjoy with a cold glass of milk!
