I bought myself a popsicle mould! It’s been on my to-do list for SO long but I didn’t want to buy just another piece of plastic to clog up my kitchen drawers unless I really needed it. Then summer came and I decided I really did need it.
Plus it turns out, making popsicles is super fun! These beauties only take 3 ingredients and are less than 150 calories. They are creamy and fruity and will satisfy that 8pm dessert craving – I promise! We aren’t about counting calories around here but even I can admit, a low cal snack is always good to have on hand.
I’m counting down the days because in two weeks we have a long weekend at the beach – wohoo! It’s a little getaway to keep us going and will be right before my husband starts his new fancy pants job as a l-a-w-y-e-r. I still love saying that.
My husband the lawyer. What a guy! It has been so long since I’ve been to the beach, I’m pretty excited to soak up the sunshine, go for beach walks and most importantly eat good food. We plan on eating the best burgers and ice cream on the coast.
I love having a sweet treat after dessert. Granted I can’t have a piece of Cookie Dough Ice Cream Cake every night but even something small will make my day. Like these super easy berry pops! They satisfy ALL my dessert cravings for less than 150 calories – winning.
And I KNOW its completely out of season for those of you experiencing the chills of winter but I’m sweating buckets because its summer over here.
Let’s Bake
Mixed Berry Yogurt Popsicles
These 3 ingredient Mixed Berry Yogurt Popsicles are the perfect snack at less than 150 calories.
Ingredients
- 225 grams (2 cups) frozen mixed berries
- 2 tablespoons caster sugar
- 375 grams (1 and 1/2 cups) greek yogurt
Instructions
- Place your frozen berries in a large mixing bowl and leave for 10-15 minutes or until they start to thaw. Then add the sugar and squish the berries using a fork until they are soft and juicy. Next, add two thirds of the berries to the greek yogurt and lightly mix through – try to keep the pretty swirls! Then fill each popsicle mould 3/4 full with the yogurt mixture, before adding a teaspoon or two of the berries on top (be careful not overfill them). Finally, add the pop sticks and freeze overnight.

I meant to buy a popsicle mold last summer and just never did. It is a MUST for this year! Especially with the baby coming– I think it will be the perfect easy treat I can still enjoy while trying to figure out how to do newborn life during maternity leave right in the thick of summer! Enjoy your vacation with your hubby, Jess! Lots of celebrating– woohoo!

First I thought these look amazing, then but it’s too cold for popsicles but then I remembered you’re having Summer in Aussie right now, just like my South African friends & family! You’ll see that you’ll use your popsicle mold alot 🙂 🙂

Definitely going to make these, Jess! It has been sooo ridiculously hot here this week, hasn’t it! These are most definitely well timed. We don’t count calories in our house either, but I know what you mean about having something lighter around to satisfy those sugar cravings. Congrats to your hubby on his new fancy pants job, too! That’s awesome!
Jessica Holmes says
Right? I mean granted it is the middle of summer but still! Aww thanks Lisa!

Yes! Do it! Otherwise I’ve seen people use those sturdy cupcake cups as moulds instead? But popsicle moulds are a bit fun!

Yum! These look so refreshing and super easy to make! Where did you get your popsicle mould from (mould/mold?!)? I’m in the market for one too… yet another single-use kitchen gadget, sigh. Heh.
Jessica Holmes says
Thanks Hannah! Oh I know right? But we live in Brisbane, I think a popsicle mould is necessary! I got mine from Taste on James Street but Wheel and Barrow have them too! 🙂
