This chewy chocolate M&M Brownie Bark is my latest brainchild and I’m LOVING IT.
Crispy and chewy at the same time (how is that even possible?) with a rich chocolate flavour, this easy brownie brittle is perfect for Christmas or holiday gift-giving.
Moist in the middle with crisp edges, my Brownie Bark tastes so much better than the store-bought kind. Promise!

Recipe testing
Truth be told, I created this recipe waaaay back in 2016 after discovering brownie brittle on a trip to the USA. I came back desperate to recreate a homemade version. And I did exactly that.
I spent a Friday night testing this recipe and by the end of it, I was on a sugar high. All in the name of recipe testing of course.
I tried making brownie bark using real chocolate like I do in most of my brownie recipes. I tried egg yolks, egg whites, more sugar, less sugar, butter versus oil and then finally – I stumbled on brownie bark perfection.
A thin and chewy brownie that’s not dry. Even though this is a brownie brittle, I still wanted something reminiscent of the gooey brownie that we all know and love.
And yes it is Christmas themed adorned with chocolate and red and green M&M’s, but you can (of course) eat this chewy Brownie Bark all year long. You don’t even need to get out an electric mixer!
Brownie Bark also makes for the sweetest gift for friends and family and fellow chocoholics. I just have to warn you that you may want to make it twice, one for you, one for them. Otherwise things could get awkward.
Ingredients
This easy M&M Brownie Bark uses a handful of pantry staples. And while I love to decorate mine with red and green M&M’s, you can adorn the brownie bark any way you like.
Here’s a snapshot of the key ingredients, including any substitutions you can make.
- Egg white: You need just one egg white for this recipe. It helps to bind the brownie bark, without adding too much moisture.
- Caster sugar: Use caster sugar or granulated sugar for this one.
- Vanilla: A dash of vanilla helps to give this bark flavour. I prefer to use a good quality vanilla extract. If you don’t have this one on hand, you can leave it out.
- Butter: Melted butter helps to create a lovely buttery bark with a chewy texture. You can use salted or unsalted butter.
- Cocoa powder: Use an unsweetened cocoa powder or 100% natural cocoa powder.
- Plain flour: Go for plain flour or all purpose flour.
- Chocolate chips: The chocolate chips add a lovely chew to the brownie bark. You can leave them out if you like – but I love the textural element they add.
- Flavourless oil: A dash of oil helps to contribute to the chewy texture and ensuring the bark isn’t too dry. You can use any kind of flavourless oil you like – vegetable oil, grapeseed oil or a mild olive oil.
- Milk: Just like the oil, the milk helps to give the brownie moisture for it’s slightly chewy texture. You can use any milk you have on hand. I usually use full fat or whole milk.
- Dark chocolate or milk chocolate: To help stick the M&M candy, we use a little bit of melted chocolate. You can use dark chocolate or milk chocolate – whatever you like!
- M&M’s: You can eat the brownie bark as is or adorn it with M&M candy like I did.

How to make it
This Brownie Bark comes together in minutes – no electric mixer needed. Here’s a quick overview of how to make it.
Step 1: In a large mixing bowl, add egg white, caster sugar and vanilla extract.
Step 2: Whisk briefly until combined and smooth.

Step 3: Add melted butter and whisk again to combine.
Step 4: Add cocoa powder, plain flour and salt and stir.
Step 5: Add milk and oil. Stir until smooth.
Step 6: Finally, stir in chocolate chips.
Step 7: Spread brownie batter into one even layer on prepared tray.
Step 8: Bake brownie bark for 15-20 minutes. Leave to cool completely.
Step 9: Heat chocolate in the microwave until melted. Drizzle over brownie bark in zig-zag pattern.
Step 10: Decorate with red and green M&M’s. Slice into logs.
Storage instructions
This easy Brownie Bark keeps well for days. You can keep it in an airtight container at room temperature. Or if you like a cold treat, you can pop it in the fridge. It will keep well for up to a week.

M&M Brownie Bark recipe
Chewy Chocolate M&M Brownie Bark that’s crispy and chewy at the same time, with drizzles of melted chocolate and M&M candy.
Ingredients
- 1 egg white
- 100 grams (1/2 cup) caster sugar and granulated sugar
- 1 teaspoon vanilla extract
- 60 grams (1/4 cup) unsalted butter, melted
- 20 grams (1/4 cup) cocoa powder, sifted
- 70 grams (1/2 cup) plain flour or all purpose flour
- 1/2 teaspoon salt
- 75 grams (1/2 cup) chocolate chips
- 1 tablespoon milk
- 1 tablespoon flavourless oil (see notes)
- 100 grams (2/3 cup) dark chocolate or milk chocolate
- 150 grams (1 cup) M&M’s
Instructions
- Line an oven tray with baking or parchment paper. Preheat oven to 180 C (350 F) standard / 160 C (320 F) fan-forced.
- In a large mixing bowl, add the egg white, caster sugar and vanilla and whisk together until smooth, approximately 1 minute or so.
- Add melted butter and mix until combined. Add cocoa powder, flour and salt and gently stir until a chocolate batter forms. Stir through chocolate chips.
- Finally, add the milk and oil and stir gently until smooth.
- Transfer your brownie batter onto your prepared tray and spread out to form a large rectangle, roughly 10 inches by 7 inches (25 cm by 18 cm).
- Bake for approximately 15-20 minutes (15 minutes for a more chewy bark, 20 for a more crisp bark). Leave to cool completely.
- Melt your chocolate in the microwave, stirring in between 15 second bursts, until smooth. Drizzle your chocolate over your bark. Press your M&M candy on top while the chocolate is warm.
- Leave for 10-15 minutes for the chocolate to set, then cut into slices.
