When I started dreaming about all the things this Biscoff Rocky Road could be, I knew I wanted it to be so very Biscoff-y. Just like my favourite Biscoff Cake, I wanted to make sure there was Biscoff goodness in every bite.
So I took inspiration from my favourite Smores Rocky Road and my Christmas Rocky Road and used a mix of both milk and dark chocolate as the base. By adding dark chocolate or semi-sweet chocolate, you not only cut down on the sweetness, but the slice holds up better at room temperature and doesn’t melt as quickly.
Then, I stirred some Biscoff cookie spread into the melted chocolate. Of course, we also had to add rocky road staples like roasted, salted peanuts and chewy, mini marshmallows. Then, just like my Biscoff Blondies, I swirled warm Biscoff all over the top too.
An hour later, I was face-to-face with one incredible, loaded Biscoff Rocky Road. Totally my new favourite thing.
what you will need
You only need a handful of ingredients – six to be exact – to make this rocky road. Here’s what you will need:
- Dark chocolate: Or semi-sweet chocolate between 45-70% cocoa. I recommend using a nice block of chocolate that you would be happy to eat on its own. It doesn’t have to be baking chocolate, just a block of regular chocolate is fine.
- Milk chocolate: You can use all dark chocolate, but I prefer to add some milk chocolate for sweetness and texture. Same as above – it doesn’t have to be fancy chocolate, just a block of your favourite milk chocolate will work.
- Biscoff cookie spread: Biscoff is a thick spread made from the very popular, caramelised Lotus Biscoff cookies. It tastes like crushed Lotus cookies, with that same softly sweet, buttery, brown sugar flavour, with just a hint of cinnamon. It’s very thick and holds its shape at room temperature. It can be found at the supermarket (here in Australia), usually near the peanut butter and other spreads, or you can find it online.
- Peanuts: I recommend used roasted, salted peanuts for this recipe. Alternatively, you can use your favourite nut, like cashews, almonds or macadamias. Or for a nut-free alternative, leave out the peanuts and add a few more marshmallows.
- Marshmallows: Mini marshmallows work best in this recipe. If you want to use big marshmallows, consider chopping them in half.
- Lotus Biscoff cookies: Add a little crunch with plenty of chopped Lotus Biscoff cookies. These spiced cinnamon cookies can be found in the local supermarket or online. You can use another type of storebought cookie – but for the ultimate Biscoff Rocky Road, try and hunt down Lotus cookies.

You can make this rocky road in just four simple steps. Here’s how:
- Heat your dark chocolate and milk chocolate until melted and smooth. Stir through Biscoff cookie spread.
- Add peanuts, marshmallows and Lotus Biscoff cookies and stir until everything is coated in chocolate.
- Transfer to prepared pan and smooth top. Then dollop over extra Biscoff, along with extra marshmallows, peanuts and cookies.
- Place rocky road in the fridge to set. Cut into small squares to serve.

Biscoff Rocky Road
A no bake Biscoff Rocky Road filled with Biscoff cookie butter.
Ingredients
- 300 grams (2 cups) dark chocolate or semi-sweet chocolate (45-70% cocoa), broken into pieces
- 200 grams (1 and 1/3 cup) milk chocolate, broken into pieces
- 120 grams (1/2 cup) Biscoff cookie spread
- 65 grams (1/2 cup) roasted salted peanuts, plus extra for decorating
- 60 grams (1 cup) mini marshmallows, plus extra for decorating
- 50 grams (1/2 cup) Lotus Biscoff cookies, roughly chopped, plus extra for decorating
Instructions
- Grease and line an 8-inch square baking pan with baking or parchment paper, ensuring two sides overhang.
- Place dark chocolate and milk chocolate in a medium-sized mixing bowl. Heat in the microwave, stirring every 20 seconds, until melted and smooth.
- Add half (60 grams or 1/4 cup) of the Biscoff cookie spread to the melted chocolate and stir.
- Then, add peanuts, marshmallows and cookies and stir until everything is completely covered in chocolate. Pour chocolate mixture into prepared pan and spread out into one even layer.
- Heat remaining cookie butter in the microwave for 5-10 seconds. Drizzle all over the top of the chocolate and swirl using a butter knife.
- Press extra peanuts, marshmallows and cookies on top before the chocolate has set.
- Refrigerate for one hour or until firm. Cut into small squares and serve.
