Baked Cinnamon Sugar Donuts

If you want your house to smell like your favourite bakery, than this is the recipe for you! Light and fluffy sweet cinnamon donuts baked in the oven and then generously rolled in cinnamon sugar. Donuts are my favourite and I love glazed donuts but some days, a soft cinnamon donut is the perfect afternoon treat. These donuts are so easy to throw together, you can impress your guests for afternoon tea in no time at all. No frying and no oil. Plus it uses basic baking ingredients so you may even have everything in your cupboard to make these right now! Just make sure you have time to sit down and enjoy one of these fresh out of the oven, while they are still warm.

Baked Cinnamon Sugar Donuts

Makes 9 donuts

1 cup (150 grams) plain flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon cinnamon
1/3 cup (70 grams) unsalted butter, softened
1/3 cup (70 grams) caster sugar
1 teaspoon vanilla extract
1 large egg
1/3 cup milk
Cinnamon sugar topping
1/4 cup (50 grams) unsalted butter
1/3 cup (70 grams) caster sugar
2 teaspoons cinnamon

Preheat the oven to 180 degrees (360 F). Lightly grease your donut pan. In a large mixing bowl, sift the flour, baking powder, baking soda and cinnamon. In a separate bowl, beat the butter, sugar and vanilla with an electric mixer until combined, then add the egg and beat for another minute or so. Add half the flour mixture and half the milk and gently stir, before adding the remaining flour and milk.

Place the mixture into each hole in the donut pan. Be careful not to overfill, each hole only needs to be about half full. Place in the oven and bake for 10 minutes. Meanwhile, combine the sugar and cinnamon in a bowl and melt the butter. Once the donuts are ready, take them out of the oven and gently transfer to a wire rack. Using a pastry brush, brush each donut, one at a time, with butter and then generously coat with the cinnamon sugar.
