Red Velvet Layer Cake

This week's recipe is inspired by Momo Milk Bar's famous layer cakes. I can't wait to visit Momo's in New York next year but for now I will be content with creating cakes at home and decorating them in Momo style. I love how their cakes are generously covered in icing but left naked on the outside, offering a glimpse into the cake itself. Its messy but fun and its really easy to recreate at home.

My friend from work recently took a trip to New York and was kind enough to bring me back a jar of Marshmallow Fluff from The Peanut Butter & Co Sandwich Shop. Needless to say I was over the moon! I have been thinking for weeks about what recipe to use it in. Should I make more of my amazing Fluffernutter Chocolate Slice? Or another batch of my favourite Marshmallow Rice Bubble Slice? I really wanted to try something new, so I finally settled on Chocolate Whoopie Pies.
