Get ready for another easy one layer cake that will be the star of any dinner party. Why? Because there’s Snickers involved! And caramel. And chocolate. And peanuts. I’m so there.
This is a chocolate lovers dream. It starts with soft chocolate cake that is covered in chocolate caramel frosting – made with REAL homemade salted caramel – and finished with a scattering of Snickers bars and honey roasted peanuts. Hello!
Our one layer cake collection is growing fast and I’m pretty happy about it. Last week I introduced you to my Peanut Butter and Jelly Poke Cake and now I’ve got a Snickers one layer cake comin’ at ya.
I love candy bars. Especially Snickers so this cake is one of my favourites already. I wanted to make a chocolate one layer cake and once I came up with the theme of Snickers I was sold – and as they say, the rest is history!
I thought about making a pb frosting but the sticky caramel in a Snickers bar is perhaps my favourite part, so I decided to go for a silky smooth chocolate caramel frosting that just about melts-in-your-mouth. #winning
The frosting is made using my trusty Homemade Salted Caramel Sauce recipe . Sugar + butter + cream = heaven. But if you’re short on time, you can use the store-bought kind. No judgement here.
Finally, it’s time for my favourite part – the toppings. Scatter over chopped Snickers bars, while eating a few along the way (it’s mandatory) and for a little crunch, a handful of honey roasted peanuts and you’re done.
The perfect chocolate cake for a celebration or party of two, four or six. It’s quick and easy, especially when compared to the effort of a layer cake. And best of all it tastes AMAZING.
The chocolate cake is light and fluffy, the frosting smooth and creamy and the toppings add some chew and crunch. You’ve got to be happy with that am I right? All the Snickers lovers in your life will agree.
Gosh, I really wish there was some of this cake left after writing this post. Luckily I had a dinner party to take it too otherwise I would have eaten it ALL. So while there are only crumbs left of this beauty, I will definitely be making it again. Will you?

Easy Snickers Chocolate Cake
Easy Snickers Chocolate Cake covered in chocolate caramel frosting and finished with a scattering of Snickers bars and honey roasted peanuts.
Ingredients
Chocolate Cake
- 105 grams (3/4 cup) plain flour
- 40 grams (1/2 cup) cocoa powder
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 80 grams (1/2 cup) brown sugar
- 50 grams (1/4 cup) caster sugar
- 115 grams (1/2 cup or 1 stick) unsalted butter
- 2 large eggs
- 1 teaspoon vanilla extract
- 120 ml (1/2 cup) of buttermilk
Chocolate caramel frosting
- 115 grams (1/2 cup or 1 stick) unsalted butter
- 375 grams (3 cups) icing or powdered sugar
- 2–3 tablespoons milk
- 20 grams (1/4 cup) cocoa powder
- 120ml (1/2 cup) salted caramel sauce
- 150 grams (1 cup) Snickers bars, chopped
- 40 grams (1/3 cup) honey roasted peanuts
Instructions
- Chocolate cake
Preheat oven to 180 C (350 F) standard / 160 C (320 F) fan-forced. Grease and line a round 8-inch springform cake tin with a little baking or parchment paper. - In a large mixing bowl, sift the flour, cocoa powder, baking soda, baking powder and then add the sugars.
- Pop the butter into the microwave for short bursts, 10 seconds or so at a time, until it is just melted. Give it a stir with a fork to eliminate any lumps. Whisk together the butter, eggs, vanilla and buttermilk until combined – don’t worry if it goes a little lumpy. Then add the wet mixture into the dry mixture and gently fold until just combined.
- Spoon the mixture into the prepared tin and pop into the oven. Bake for 25 minutes or until a skewer inserted into the middles comes out clean. Leave the cake for 5-10 minutes before transferring to a wire rack to cool completely.
- Chocolate caramel frosting
In a large mixing bowl, beat the butter until creamy and smooth and then add one cup of icing sugar, along with a tablespoon of milk to help loosen up the mixture. Beat until combined. Then sift in another cup of icing sugar and a tablespoon of milk. Finally, add the last cup of icing sugar, along with the cocoa powder. Beat again. The frosting should be nice and creamy. If its too thick, you can add another tablespoon of milk. - Finally, add the caramel sauce and beat until the frosting is lovely and smooth. Using a spatula, gently frosting your cake and then scatter then Snickers bars and peanuts over the top.

When you make the caramel sauce and are going to add it to the frosting do you let it cool more than the 15 minutes?

Great question Susie! Yes, the caramel sauce will need to be at room temperature when adding it to the frosting.

Hi Michaela, excited you are going to try this cake. Yes you can definitely make it ahead of time. I generally don’t like putting my cakes in the fridge as it tends to dry them out a little. So I’d recommend making the cake the day before and wrapping it in plastic wrap once it’s completely cooled. Keep it at room temperature and then just frost on the day of serving. You can make the frosting ahead of time and just keep it in the fridge. Add an extra tablespoon of milk and give it a quick beat or stir to bring it back to life when you are ready to use it. Hope that helps!

Hi Ana, great question! You can make your own buttermilk simply by adding a tablespoon of white vinegar or fresh lemon juice to one cup of regular milk. Let it sit for 5 minutes than it’s ready to go 😊
