Salted Caramel Chocolate Cupcakes

Chocolate cupcakes topped with creamy salted caramel frosting.

Ingredients

Chocolate Cupcakes

  • 105 grams (3/4 cup) plain flour
  • 40 grams (1/2 cup) cocoa powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 100 grams (1/2 cup) caster sugar
  • 45 grams (1/4) brown sugar
  • 115 grams (1/2 cup or 1 stick) unsalted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 120 ml (1/2 cup) buttermilk

Salted Caramel Frosting

  • 115 grams (1/2 cup or 1 stick) unsalted butter, softened
  • 375 grams (3 cups) icing or powdered sugar
  • 80 ml (1/3 cup) salted caramel sauce (homemade or store bought), room temperature, plus extra for decorating
  • 12 tablespoons milk
  • 12 Rolo chocolates

Instructions

  1. Preheat oven to 180 C (350 F) standard / 160 C (320 F) fan-forced. Line a 12 hole muffin tin with cupcake liners.
  2. In a large mixing bowl, sift flour, cocoa powder, baking soda, baking powder and then add sugars.
  3. Pop the butter into the microwave for a short burst, 10 seconds or so at a time, until it becomes very soft but just before it is completely melted. Give it a stir with a fork to eliminate any lumps.
  4. In a separate mixing bowl, add the eggs, vanilla and butter and whisk together until smooth. Then add the wet mixture into the dry mixture, along with the buttermilk and gently fold until just combined.
  5. Spoon the mixture into the prepared cupcake liners and pop into the oven. Bake for 18 minutes or until just cooked through.  Set cakes out onto a wire rack and leave to cool completely.
  6. To make the salted caramel frosting, beat the butter for a minute or two with an electric mixer until soft and creamy. Sift in the icing sugar, add the salted caramel sauce and start to beat. Add a tablespoon of milk and continue to beat.
  7.  If it’s a little dry, add another tablespoon of milk. It should be thick and creamy. Once the frosting is ready, pipe onto cupcakes using a piping bag fitted with a large round tip.
  8. Drizzle with extra caramel sauce and top with a chocolate Rolo.
