White Chocolate Rice Krispie Squares

Easy no bake White Chocolate Rice Krispie Treats with marshmallows, coconut and pistachios.

Ingredients

  • 80 grams (2 cups) Rice Krispies or Rice Bubbles
  • 60 grams (1 cup) shredded coconut
  • 60 grams (1/2 cup) pistachios*
  • 60 grams (1 cup) mini marshmallows
  • 600 grams (4 cups) good quality white chocolate

Instructions

  1. Grease and line an 8 inch square baking tin with baking or parchment paper. In a large mixing bowl, add rice cereal, coconut, pistachios and marshmallows.
  2. Heat chocolate in the microwave, stirring in-between 30 second bursts until just melted. Pour chocolate over dry ingredients. Quickly mix together until completely coated.
  3. Transfer to baking tin. Quickly spread out into one smooth layer and press down using the back of a spoon.
  4.  Refrigerate for at least one hour or until the chocolate is set. Cut into small squares and serve.

Notes

*You can use any nut you prefer, peanuts, almonds, pecans etc.
