These cookies are super fun to make! Just look how colourful they are! You know they are going to be good considering they are completely stuffed with M&M’s. I made these for a family birthday do, hoping they would be a hit with my nieces and nephew. Kids love cookies and candy right?
I used my tried and true cookie recipe and added in a generous helping of M&M’s. I just used plain M&M’s but I’m sure you could substitute in your favourite kind. I would love to try these with America’s Peanut Butter M&M’s. When you take these out of the oven, add a few M&M’s on top while they are still warm for an extra pop of colour. They are almost too pretty to eat!
Colourful M&M Cookies
Makes approximately 16 cookies
115 grams (1 stick or 1/2 cup) unsalted butter, softened
1/2 cup brown sugar
1/4 cup caster sugar
1 teaspoon vanilla extract
1 large egg
1 and 1/4 cup plain flour
1/2 teaspoon baking soda
1 teaspoon cornflour
3/4 cup plain M&M’s + extra for decorating
Preheat the oven to 180 degrees (360 F). Line two baking trays with baking paper. In a large mixing bowl, add the butter, sugars, vanilla, egg and beat using an electric beater until combined. Add the sifted flour and baking soda and stir. Add in M&M’s and stir until combined. Cover and place cookie dough in the fridge for at least 30 minutes. This will help the dough firm up so the cookies won’t spread too thin during baking. Roll teaspoons of the mixture into balls and place on the baking trays, leaving room for the cookies to flatten out. Place in oven for 10 minutes or until golden brown on the edges and still soft and gooey in the middle. Once they have cooled slightly, move onto a wire rack and gently place extra M&M’s on the top.
