Triple Chocolate Chunk Cookie Bars
Makes one 8 inch pan
1/2 cup (1 stick or 115 grams) unsalted butter, room temperature
1/2 cup brown sugar
1/4 cup caster sugar
1 teaspoon vanilla extract
1 large egg
1 cup plain flour
1/2 teaspoon baking soda
1/2 teaspoon cornflour (cornstarch)
1/2 cup cocoa powder
1 tablespoon milk
1/2 cup dark chocolate chunks
1/2 cup white chocolate chunks
Grease an 8 inch square baking tin and line with baking paper so two sides overhang. Preheat the oven to 180 degrees (360 F). In a large mixing bowl, add the butter, brown sugar and caster sugar and beat with an electric mixer until creamy. Add the vanilla and the egg and beat for a minute until combined. Sift in the flour, baking soda, cornflour and cocoa into the mixture and stir with a wooden spoon. Add the tablespoon of milk and then mix in both the dark chocolate and white chocolate chunks.
Spoon the chocolate mixture into your prepared tray and smooth the top with a spatula. Bake in the oven for approximately 22 minutes or until firm on the edges but still soft and tender in the middle. Leave to cool for 10 minutes or so before transferring to a wire rack to cool completely. Divide into squares and enjoy with a cold glass of milk. I recommend devouring one still warm from the oven!
