I hope you're in the mood for chocolate because today's post is ALL about chocolate cake. I'm talking gorgeous Mini Sour Cream Cakes that are topped with a thick and creamy chocolate frosting made from real chocolate and covered in chocolate shavings. That is a lot of chocolate.
I've mentioned before that chocolate cake is my favourite so this is a neat way to make regular chocolate cake just a little bit special. The sour cream in the batter means the cake is light, fluffy and super moist. And it stays that way for days. I can easily eat it without the frosting, it's that good!
Speaking of frosting, I love buttercream frosting. Especially this one because it does away with cocoa powder and opts for real chocolate instead. That means you get a delicious, fudgy frosting that is packed with real chocolate flavour - you can't go wrong with that!
You could decorate these cakes however you wish. I think they would be really beautiful topped with a chocolate-dipped strawberry but I went for chocolate shavings just because I was in an all-out chocolate mood.

I used a mini loose bottom dessert or cheesecake pan to make these (mines 2 x 3 inch) which I bought in store but there are plenty of similar ones on Amazon. Otherwise you could bake these in a muffin pan and make cupcakes instead but I do love the striking shape of these mini cakes.
I'm off to the dentist today (insert sad face) so I think I deserve a treat. Only problem is you can't really eat when half your face is numb! I'll have to settle for the sweet memory of these Mini Sour Cream Chocolate Cakes!
