There's just something about sprinkles that makes me smile. So these chocolate freckles are making me very happy. Do they have freckles in America? Milk chocolate covered in hundreds and thousands? They are sweet, crunchy and really delicious. Super fun to eat but even more fun to make - you can create your own chocolate freckles with only two ingredients!
Last week I went on a one night cruise out of Sydney for work and at the airport I was so excited to find a pick 'n' mix lolly booth. They always have the best candy! I love loading up on sour lollies but I can also never say no to a chocolate freckle. So as I headed to the plane clutching my paper bag, eating a big chocolate freckle, I had the inspiration for this week's recipe. Big ones, little ones, milk chocolate and white chocolate, aren't these just the sweetest?
I think the best part of making these freckles was finding fun ways to use them. Of course eating them straight up goes without saying! But you can also use them as cute cupcake toppers or to decorate cookies like my Chocolate Fudge Cookies. Or make big ones for a giant chocolate freckle ice cream sandwich!
Homemade Chocolate Freckles
Makes approximately 30 mini freckles
250 grams (1 and 2/3 cup) good quality milk chocolate melts
1/2 cup colourful hundreds and thousands
Place about 30 mini muffin liners onto a large tray. Then pop all the chocolate melts into a bowl and melt the chocolate in the microwave, stirring every 20 seconds until just melted. Using a spoon, gently pour a small amount of chocolate into each one and then sprinkle over the hundreds and thousands until the chocolate is completely covered. Continue until you run out of chocolate. Pop the freckles into the fridge for a few hours to set.
You can also use cookie cutters or other items you find around the house to make bigger freckles or interesting shapes. Just lightly grease them with a bit of butter if you are worried about the chocolate sticking. I used a heart cookie cutter to make some giant hearts and a mini cake tin to make the big circles. Just have fun with it!
